Türlü (Various Stewed Vegetables)

Ingredients:
½ kg cubed meat
250 gr green beans
2 eggplants
2 squashes
250 gr okra
4 medium sized tomatoes
2 medium sized onions
green and red peppers
salt and pepper

Cook the meat in pressure cooker like you always do. Clean, wash and drain the vegetables. At the same time, mix the chopped onions, tomatoes and salt. Place the cubed meat in a deep sauce pan, put in the green beans, eggplants, squash and okra separating the vegetables with layers of onion and tomato mixture. Cook over medium and then low heat for half an hour. Pilav with tomatoes, çoban salad or cacık accompanies türlü.

Recently I have begun to cook for 20-25 minutes, not half an hour. I coat a single soufflé pan with oil, place the green pepper, one round tomato slice, the vegetables of türlüand the meat. After covering the pan with ready-to-cook mille feuilles dough, I put it in the oven. When the mille feuilles bake, I take them out and put them on plates upside down. It seems very classy. Of course pilav and cacık don't suit it.
